Ingredients for 4 pesto toasts :
green pesto, fresh crusty bread, 1 tbsp of olive oil, 1 small ball of mozzarella, 1 pepper [roasted, skinned and de-seeded]
- Cut then grill the bread for 2-3 mins on each side.
- Cut the ball of mozzarella into 4 equal slices. Tear the mozzarella and pepper into smaller pieces. preheat the oven to 3-4*C.
- Spread each toast with a layer of pesto and add some pepper and mozzarella on top. Grill for 3 mins or until the cheese melts. Then serve. By Skye.
