S3 Hospitality

  • REHIS Course 

Students develop their knowledge of food hygiene practices in the hospitality industry, building upon prior learning from S1 & S2. Following a syllabus provided by the Royal Environmental Health Institute of Scotland pupils will gain a better understanding of; basic food hygiene, food safety and food safety legislation.

To achieve in this unit the candidates will complete a 45 minute multiple choice assessment.
Once completed and passed the candidates will receive a certificate which is approved and recognized in the Hospitality industry for work which is valid for 5 years.

  • Current Dietary Advice

Students will learn about current Scottish dietary targets and the health benefits. The students will examine the links between health and diet. Students will also learn to adapt recipes / menus in line with current dietary advice.
The students will be making dishes to help reach these targets and make recipe records of these dishes and explain why the recipes reach these targets and what the health benefits are.
