Culinary Excellence

As part of the Food Technology departments Culinary Excellence Culinary programme our Hospitality pupils are interviewed by senior management staff of The Busby Hotel.  The successful applicants are invited to participate in a three month partnership with the hotel.  During this time our pupils are trained in many aspects of the Hospitality Industry.  These aspects include Health and Safety, Personal and Kitchen Hygiene, Menu planning, Food preparation techniques, processes and service.  Our pupils are also trained in various front of house activities.  These include meeting and greeting customers, setting up function suites and dining rooms with appropriate crockery, cutlery, glassware and linenware.  The pupils also learn how to take food and drink orders and learn how to serve a four course meal with wine, tea and coffee.

To gain their Culinary Excellence Certificate at the end of their training the pupils must prepare, cook, serve and host a four course meal at the hotel for 40 invited guests.  The guest list includes parents/carers of the pupils as well as guests from The Busby Hotel and Glasgow City Council’s Education Department.
