Curriculum

S1

Attend 2 periods a week. 1 period for theory and 1 period for cookery.

Curriculum-

Unit 1 -Ready steady Cook , Introduction to Health and Safety and cooking.

Unit 2- Introduction to Textiles, Christmas decoration is designed and made.

Unit 3 and  4 – Celebrating Foods from around the World.

Unit 5- Introduction to Nutrients.

S2

Attend 2 periods a week. 1 period for theory and 1 period for cookery.

Curriculum –

Unit1- Hygiene and Food Safety

Unit 2-Developing Healthy food choices 

Unit 3- Easter Design Challenge

Unit 4- Sustainability within the Food Industry 

S3

Attend 2 periods a week. 1 period for theory and 1 period for cookery.

Curriculum-

Royal Environmental Health Institute( REHIS) qualification in Elementary Food Hygiene 

Scottish Dietary Goals

Introduction to Hospitality 

S4

Attend 4 periods a week.

Nat 5 Hospitality

Continuous Assessment both written and cookery throughout the year.

4 units to be achieved to receive overall qualification.

Unit 1- Developing Skills for working in the Hospitality Industry

Unit 2- Developing skills for working in the Professional Kitchen

Unit 3- Events

Unit 4- Front of House Operations 

 

NPA Bakery

4 units to be achieved to receive overall qualification.

Continuous Assessment throughout the year.

Unit 1- Craft Baking

Unit 2- Bread Making

Unit 3- Pastry Making

Unit 4- Cake Decoration

 

S5/6 

Attend 6 periods a week

SVQ Hospitality 

Completed within department’s Industrial kitchen/Restaurant.

11 units to complete.

Continuous Assessment throughout the year.
