I have done a lot of baking over Easter Holidays and I would like to share another recipe with you to try with your children. Since we are struggling to get a flour I decided to make chocolate chip cookies without using flour…and they were delicious.
Chocolate chip cookies
Ingredients:
1/2 cup unsalted butter (room temperature)
3/4 cup dark brown sugar
1/2 tablespoon vanilla extract
1 large egg (room temperature)
1 and 1/4 cup ground old fashioned oats
1 and 1/2 cup old fashioned oats (whole)
1 teaspoon cinnamon
1/2 teaspoon salt
1/2 cup semi-sweet chocolate chip or raisins for a healthier option 🙂
Instructions:
- Preheat oven to 350F
- Beat butter and brown sugar together until fluffy about 2minutes
- Beat in vanilla and egg
- Stir in ground oats, whole oats, cinnamon, baking soda and salt
- Mix until well combined
- Stir in chocolate chips or raisins
- Using a 1/4 cup measuring cup, pack dough into the 1/4 cup and turn out dough onto baking sheet
- Bake immediately about 10-15min
- Remove from oven and cool them for about 5min
