We all back and ready for new experiences and challenges! Hope you all safe and healthy.

I have done a lot of baking over Easter Holidays and I would like to share another recipe with you to try with your children. Since we are struggling to get a flour I decided to make chocolate chip cookies without using flour…and they were delicious.

Chocolate chip cookies

Ingredients:

1/2 cup unsalted butter (room temperature)

3/4 cup dark brown sugar

1/2 tablespoon vanilla extract

1 large egg (room temperature)

1 and 1/4 cup ground old fashioned oats

1 and 1/2 cup old fashioned oats (whole)

1 teaspoon cinnamon

1/2 teaspoon salt

1/2 cup semi-sweet chocolate chip or raisins for a healthier option 🙂

Instructions:

  1. Preheat oven to 350F
  2. Beat butter and brown sugar together until fluffy about 2minutes
  3. Beat in vanilla and egg
  4. Stir in ground oats, whole oats, cinnamon, baking soda and salt
  5. Mix until well combined
  6. Stir in chocolate chips or raisins
  7. Using a 1/4 cup measuring cup, pack dough into the 1/4 cup and turn out dough onto baking sheet
  8. Bake immediately about 10-15min
  9. Remove from oven and cool them for about 5min
