Wartime Cake Recipe

My Mum has a old note book which her gran, my great gran ,wrote lots of recipes over the years. I was looking through it and found a recipe for wartime cake. It was used in wartime because they were no eggs in it which were hard to come by during the war. Feel  free to try it.

War time cake

Ingredients

1 cup of syrup

4 ozs Margarine

1 cup sultanas

Teaspoon Mixed Spice

1 cup currants

1 cup of milk

pinch of salt

3 cups plain flour

1/2 teaspoon of baking powder

1 teaspoon bicarbonate of soda

Boil syrup, margarine, sultanas, mixed spice, currants and milk together for 3 minutes. Leave to cool. Dissolve baking soda in a little warm water. Then add to bowl with flour and bicarb. Mix boiled ingredients with flour mixture. Put in greaseproof lined tin and place in oven for 1 hour at 180c.
