Through its emphasis on safety and hygiene, the course instils in students an understanding of the need to follow safe and hygienic practices.<\/p>\n<p>Through studying this course students will develop skills and knowledge in the following areas:<\/p>\n<ul>\n<li><img loading=\"lazy\" decoding=\"async\" class=\"alignnone wp-image-60\" src=\"https:\/\/blogs.glowscotland.org.uk\/sb\/public\/peebleshshwb\/uploads\/sites\/3727\/2022\/06\/02123510\/hospitality-banner-300x225.jpg\" alt=\"\" width=\"5\" height=\"4\" srcset=\"https:\/\/blogs.glowscotland.org.uk\/sb\/public\/peebleshshwb\/uploads\/sites\/3727\/2022\/06\/02123510\/hospitality-banner-300x225.jpg 300w, https:\/\/blogs.glowscotland.org.uk\/sb\/public\/peebleshshwb\/uploads\/sites\/3727\/2022\/06\/02123510\/hospitality-banner-150x150.jpg 150w, https:\/\/blogs.glowscotland.org.uk\/sb\/public\/peebleshshwb\/uploads\/sites\/3727\/2022\/06\/02123510\/hospitality-banner.jpg 474w\" sizes=\"auto, (max-width: 5px) 100vw, 5px\" \/>using food preparation techniques and cookery processes in the preparation of dishes<\/li>\n<li>understanding and demonstrating knowledge of the importance of food safety and hygiene and its application in the practical context<\/li>\n<li>selecting, weighing, measuring and using appropriate ingredients to prepare and garnish or decorate dishes<\/li>\n<li>understanding and demonstrating knowledge of the characteristics of a range of ingredients, and their function in a practical context<\/li>\n<li>understanding and demonstrating knowledge of the importance of sourcing sustainable ingredients<\/li>\n<li>understanding and demonstrating knowledge of current dietary advice relating to the use of ingredients<\/li>\n<li>following recipes in the preparation of dishes and carrying out an evaluation of the product<\/li>\n<li>planning, costing, organisational and time management skills in a cookery context<\/li>\n<li>producing, portioning and presenting dishes appropriately<\/li>\n<\/ul>\n<p><strong>Assessment<\/strong><\/p>\n<p>There are two components within the final assessment<\/p>\n<p><strong>Practical activity<\/strong> <strong>(70% of final mark)<\/strong><\/p>\n<p>This requires the candidate to prepare and serve a given three course meal within 2 hours 30 minutes.<\/p>\n<p>The activity has two parts;<\/p>\n<p><strong>Planning<\/strong> for practical activity \u2013 Time-plan, Equipment requisition and service details.
