The Categories widget displays a list of the categories.
There are a few settings:
You can see the categories displayed as a dropdown in the sidebar of this page. In the Content Bottom 1 Widget Area shown on every page you can see the standard list.
The Categories & tags on the few example posts on this site are for demonstration and are meaningless.
