{"id":93,"date":"2019-12-30T00:05:09","date_gmt":"2019-12-30T00:05:09","guid":{"rendered":"https:\/\/blogs.glowscotland.org.uk\/gc\/kpsscurricularpathways\/?page_id=93"},"modified":"2024-01-12T13:37:28","modified_gmt":"2024-01-12T13:37:28","slug":"pathways-to-the-senior-phase-hospitality-practical-cookery","status":"publish","type":"page","link":"https:\/\/blogs.glowscotland.org.uk\/gc\/kpsscurricularpathways\/curricular-areas\/health-and-wellbeing\/pathways-to-the-senior-phase-hospitality-practical-cookery\/","title":{"rendered":"Pathways to the Senior Phase: Hospitality"},"content":{"rendered":"<h1><strong>SQA National Qualifications in Practical Cookery<\/strong><\/h1>\n<p>The main purpose of the Practical Cookery courses is to develop learners\u2019 practical cookery skills and their knowledge and understanding of ingredients and to provide a set of foundation skills for those who wish to progress to professional hospitality courses or work.<\/p>\n<p class=\"s59\"><span class=\"s24\"><span class=\"bumpedFont20\">Practical Cookery is available at N4 and N5 and has four distinct units:<\/span><\/span><\/p>\n<div class=\"s97\"><strong><span class=\"s24\"><span class=\"bumpedFont20\">Cookery Skills, Processes and Techniques<\/span><\/span><\/strong><\/div>\n<p class=\"s59\"><span class=\"s25\"><span class=\"bumpedFont20\">This unit will develop learners\u2019 cookery skills, food preparation techniques and their ability to follow cookery processes, in the context of producing dishes. <\/span><\/span><\/p>\n<div class=\"s97\"><strong><span class=\"s24\"><span class=\"bumpedFont20\">Understanding and Using Ingredients \u00a0<\/span><\/span><\/strong><\/div>\n<p class=\"s59\"><span class=\"s25\"><span class=\"bumpedFont20\">This unit will develop learners\u2019 knowledge and understanding of ingredients from a variety of different sources and their uses. It also addresses the importance of responsible sourcing of ingredients and of current dietary advice. <\/span><\/span><\/p>\n<div class=\"s97\"><strong><span class=\"s24\"><span class=\"bumpedFont20\">Organisational Skills for Cooking<\/span><\/span><\/strong><\/div>\n<p class=\"s59\"><span class=\"s25\"><span class=\"bumpedFont20\">This unit will develop learners\u2019 organisational and time management skills&#8230; They will also further develop the ability to carry out an evaluation of the product.<\/span><\/span><\/p>\n<div class=\"s97\"><strong><span class=\"s24\"><span class=\"bumpedFont20\">Added Value Unit<br \/>\n<\/span><\/span><\/strong><\/div>\n<p class=\"s59\"><span class=\"s24\"><span class=\"bumpedFont20\">Learners will produce a two or three-course meal, safely and hygienically. <\/span><\/span><\/p>\n<p class=\"s59\"><strong><span class=\"s35\"><span class=\"bumpedFont20\">Assessment<\/span><\/span><\/strong><\/p>\n<p class=\"s59\"><span class=\"s25\"><span class=\"bumpedFont20\">To achieve at N4, all learners must pass each unit assessment and complete the Practical Assignment to a satisfactory level. \u00a0<\/span><\/span><\/p>\n<p class=\"s59\"><span class=\"s25\"><span class=\"bumpedFont20\">At N5, learners must pass all unit assessments and complete a Practical Assignment as set by SQA worth 100 marks. \u00a0This course is graded A-C.<\/span><\/span><\/p>\n<p class=\"s59\"><strong><span class=\"s35\"><span class=\"bumpedFont20\">Progression<\/span><\/span><\/strong><\/p>\n<p class=\"s59\"><span class=\"s25\"><span class=\"bumpedFont20\">The Scottish tourism industry employs more than 200,000 people, representing 9 percent of all Scottish jobs, and is a fun, vibrant and fast paced industry to be part of.<\/span><\/span><\/p>\n<p class=\"s59\"><span class=\"s25\"><span class=\"bumpedFont20\">From catering to marketing there are many paths to pursue and a multitude of skills are required to keep the Scottish tourism industry developing in this ever changing consumer world.<\/span><\/span><\/p>\n<p class=\"s59\"><span class=\"s25\"><span class=\"bumpedFont20\">Educational establishments across Scotland offer undergraduate and postgraduate degrees and executive development programmes and training courses to provide the necessary skills for the tourism and hospitality industry.<\/span><\/span><\/p>\n<h1><strong>Skills for Work: Hospitality SCQF Level 5<\/strong><\/h1>\n<p>In this course you will develop the skills required to work in a professional working environment, including hospitality, front of house and kitchen work. You will gain a variety of useful and creative kitchen skills, excellent hygiene knowledge and essential food service skills. You will cook a variety of dishes which demonstrate your cookery and hygiene skills.<\/p>\n<p>You will showcase all that you have learned by planning, delivering and catering a variety of exciting school events for our wider school community.
