Description of each course:

Hospitality – National 4/ National 5

• National 4 Hospitality: Practical Cookery Course enhances learners’ personal effectiveness in cookery and provides a set of skills for those who wish to progress to further study in the hospitality context.

• National 5 Hospitality: Practical Cookery develop a range of cookery skills and processes, as well as food preparation techniques.

Planning and producing meals and presenting them appropriately, learners develop understanding of ingredients from a variety of different sources, as well as of their uses and responsible sourcing and sustainability. Learners also develop an understanding of the choice of ingredients and the impact these have on health and wellbeing, as well as their knowledge and understanding of food safety and hygiene practices.

Health and Food Technology (HFT) – National 4/ National 5/ Higher/ Advanced Higher

• National 4 Health and Food Technology Course enables learners to develop practical and technological skills, knowledge and understanding to make informed food and consumer choices. Learners develop safe and hygienic practices in practical food preparation, as well as knowledge of the relationships between health, food and nutrition

• The National 5 Health and Food Technology Course enables learners to develop knowledge and understanding of the relationships between health, food and nutrition, and to make informed food and consumer choices. Learners develop practical and technological skills and apply safe and hygienic practices in practical food preparation.

• The Higher Health and Food Technology Course addresses contemporary issues affecting food and nutrition and how they affect consumer choices. These include: ethical and moral considerations, sustainability of sources, and food production and development. Learners analyse the relationships between health, food and nutrition, and plan, make and evaluate food products for a range of dietary and lifestyle needs.

• The Advanced Higher Health and Food Technology Course addresses contemporary issues affecting food and nutrition and how they affect consumer choices. These include: ethical and moral considerations, legislation, and sustainability, psychology of food trends, and food production and development. Through research, learners will apply their knowledge and understanding of the relationships between nutrition, food and health, and develop detailed knowledge and understanding of the science and sensory testing of food.

Practical Cake Craft – National 5

• Our Hospitality: Practical Cake Craft qualification develops learners’ cake baking and cake finishing skills in a range of production methods. Learners also develop their knowledge of food safety and hygiene, and develop organisational skills in the context of managing time and resources.
