Free to download, Pivot allows you to create simple but very effective animations using stick figures.  You can add your own backgrounds and export your animations as GIFs or to You Tube.

A free online animation tool which allows pupils to create stop motion animations of up to 100 frames.  A simple and colourful interface with a good selection of preloaded graphics as well as drawing tools.  Completed animations can be saved as .gif files.

An award winning camera and software combo which is designed to make stop motion animation easy for children.  It is highly affordable and they even offer 30 day free trials to UK and USA schools so you can try before you buy.  Lots of good support on their website including ideas on how to use it across the curriculum from early years to upper primary.
